Our Core of Four series celebrates and highlights the four core ingredients that make beer so great: malt, hops, yeast and water. Element 1: Malt. This amber lager was brewed in collaboration with our friends at Washington's own Skagit Valley Malting and built with 100% Washington grown malt varietals. Malt flavors take center stage, of course, but Barbe Rouge hops keep things grounded in perfect balance. A portion of all sales of Element No. 1 will be donated to Skagitonians to Preserve Farmland.

Corvus Frambicus American Raspberry Sour
Here it is folks, our raspberry sour with all the soul we could squeeze into it. This pours bright and red with strong raspberry and mature soured notes on the nose. It drinks crisp and dry with a slight ‘raspberry hard candy’ note on the front. This soon gives way to a huge acid content which pushes the edge of comfort on the back of the palate. The finish is surprisingly clean and lingering. The base beer is soured using one of our two house sour strains, “Angelica”, which we grew up from wild bacteria and yeasts native to the Skagit valley. Subtle undertones of chocolate, dried fruit, and hay are a result of not only the cherry varietals that were sourced, but the tiny microflora that inhabit the fruit, lending a specific terroir to this rare bird.

In the wise traditions of Raven as creator and ancestor, the Raven is often addressed as Grandfather Raven. It's with this stately sense of pomp and legend that we bring you our Grandfather Raven Imperial Stout. However, this is an older, grander bird. Having spent its time aging in Westland Whiskey single-malt barrels before blending in stainless steel, our Great Grandfather Raven is a rare find indeed. This robust black ale is full with notes of rich dark caramel, unsweetened chocolate, and hints of coffee all mellowed out with smooth oak and top-shelf whiskey. Stately, yes, but at 10.2% ABV - perhaps it's just a vain attempt to get this clever spirit to act respectably.

Gunpowder Plot Nitro Porter
This annual release nitro porter celebrates the thwarting of an insidious plot attempted by Guy Fawkes & his band of anti-heroes on November 5th, 1605. Fawkes’ goal was to blow up the House of Lords with barrels of gunpowder. This year we plotted closely with Anchorhead Coffee Roasters, out of Duvall, to create a perfectly roasted coffee exclusively for this beer. We soaked a portion of those pristine beans in top shelf bourbon, and cellared the whole shebang on criminal amounts of cocoa nibs. In order to unify the flavors and give it that classic British feel we conditioned it on Nitrogen. This beer pairs well with Bangers, treacle toffee or burning your Guy Fawkes on a bon-fire. So quench the conspiracy, light your fires and remember the 5th of November.

La Petite Mort
“La Petite Mort” means “a little death” in French. What’s a little death if it comes in this form? Well worth it we think. This Belgian inspired strong abbey style dark ale is brewed with a Belgian Ardennes yeast strain, and a generous three month cellar aging mellows and matures this fine ale. This additional time brings out flavors of dark fruit such as plums and raisins, deep caramel notes, and wonderful earthy tobacco tones.

Nothing but Hazy IPA
This is one of our two rotating hazy style beers that we brew throughout the year. We started with some 2-row pale and pilsner malt and adding some wheat, lactose and oats to build a hazy base. Then we fermented this beer with Imperial Yeast lab's Juicy strain to enhance the hazy appearance and add some more fruity flavors to the hop profile. Meet Nothing but Hazy, a paradise of tropical and citrus aromas, balanced by light hop bitterness and a mid-dry finish.

Raven de Brett Specialty Pale
This Northern France inspired strong pale hybrid has gone through a seven month secondary fermentation with the “wild” yeast strain brettanomyces lambicus, then dry hopped in order to meld bright fresh hop aroma and accent with aged wild yeast character. Brewed in our Redmond Innovation Brewery for the 2020 Hop Mob Roadshow, we created a beer supporting the mission of highlighting outstanding hop character. Two rounds of dry hopping on a 2.5lb-per-barrel hop bill of Strata, Barbe Rouge and El Dorado bring red berries and stone fruit into the spotlight. Malt plays a supporting role, adding body to balance the intense hop character with the rye malt harmonizing with the resinous hop notes.
