  • Chocolate Wild Experimental Ale

    This highly experimental beer is for those who enjoy chocolate with a cocoa content higher than 80%. Powerful bitter cocoa notes emerge from a base of chocolate and caramel malts through the tradition of secondary ferments used to commonly produce sour, field, and wild beer. Field beer could be defined as any beer that uses the naturally occurring flora, usually yeasts or bacteria, on an agricultural product as the life for any of its fermentation stages. Much of the flavor we perceive as chocolate comes from the wild fermentation of the cocoa pod. For this beer we re-animate those organisms but use them for secondary fermentation; this imparts rich cocoa, earthy complexity and a palate stretching bitter in a non-hop bitter way.

  • Corvus Kriekus Wild Sour Ale

    This could be considered our first truly soured fruit beer. We added season peak Washington sourced cherries in two varietals, Chelans and Titans, to barrel aging scotch ale. The cherries were intentionally field direct and added not only fermentables, cherry tannin and color to the beer but also provided the necessary micro-flora to sour the beer. We then blended various barrels to yield a balanced, quaffable, complex and fruity Black Raven first. Rare bird, appears infrequently.

    Gold Medal Winner 2012 North American Beer Awards: Gold Medal - Experimental

    The Feral saison is an experimental beer brewed to see what happens when you brew a beer with native WA wine yeast. This beer starts out as a four grain saison in the brewhouse. The wort is then racked into white wine barrels procured from Efeste Winery in Woodinville. At this point, Washington wild wine yeast provided by Efeste is pitched into the barrels. Primary fermentation is completed in a few weeks and the beer continues to age in the barrels for a short while longer. From there it racked to stainless and further matured.

    In the creator role, and in the Raven's role as the totem and ancestor, the Raven is often addressed as Grandfather Raven. With this stately sense of pomp and tradition we bring you our Imperial Stout. This robust black ale is full with rich dark caramel, unsweetened chocolate, and hints of coffee aromas and flavors. Stately indeed, but at 9.5% ABV, perhaps it is just a vain attempt to encourage the trickster spirit to act respectably. Released annually in the winter.

    This oak barrel aged porter celebrates an attempted insidious plot executed by Guy Fawkes & his band of anti-heroes on November 5th, 1605 with an explosion of bourbon, chocolate, and coffee. This beer pairs well with Bangers, treacle toffee or burning your Guy Fawkes on a bon-fire. Cheers, enjoy some fireworks in a glass. Released annually on November 5th.

    This is one of our rarest birds. The KY Coco is the bourbon barrel version of our other rare bird Coco Jones. Based on the Tamerlane Brown Porter, this beer is aged for many months in bourbon barrels. After the barrel aging, we rack the beer to stainless and infuse it with toasted coconut.

    “La Petite Mort” means “a little death” in French. What’s a little death if it comes in this form? Well worth it we think. This Belgian inspired strong abbey brown ale is brewed with a Belgian Ardennes yeast strain, and a generous three month cellar aging mellows and matures this fine ale. This additional time brings out flavors of dark fruit such as plums and raisins, deep caramel notes, and wonderful earthy tobacco tones.

    2013 Washington Beer Awards: silver medal – American-Style Pale Ale

    This beer was born out of the joy of late night double batch brewing. The whirring of the pumps and the wails of David Byrne led us to this new IPA idea. Built on a simple malt base this IPA will let the hops talk straight to your head. The hope behind this beer was to make a low alcohol IPA that has the same hop aroma and flavor profile of a standard IPA & even some double IPAs out there. Take a sip, sit back and ask yourself, can I get used to this lifestyle? Well, with a bouquet of hop aroma blasting us in the face and fruit flavors of peach, nectarine, & grapefruit backed up with a clean/dry bitterness leaving us wanting more, we sure can.     This robust strong ale features pale malts and generous hop additions. After primary fermentation, several American rye whiskey barrels are filled and cellared to age. The remaining beer is then cellared in a stainless steel tank. After many months of aging, the barrels are then blended into the remaining batch aged in the stainless steel tank. Rare bird, released annually in winter and in limited quantity throughout the year.

    Pour Les Oiseaux is a blend of complex earthy, fruity and light tannic flavors with a crisp and refreshing finish. Pour Les Oiseaux is aged in French oak white wine barrels with the addition of brettanomyces. Released annually.

    This Northern France inspired strong pale hybrid has gone through a six month secondary fermentation with the “wild” yeast strain brettanomyces lambicus, then dry hopped in order to meld bright fresh hop aroma and accent with aged wild yeast character. Pear and citrus hops play with tropical fruit, smooth earth, and light hay flavors from the wild yeast. Released annually.

    Trickster IPA

    In mythology, the raven can play tricks or otherwise disobey normal rules, hence the name Trickster. This well-balanced IPA has a light fruit, citrus and piney hop aroma with a full hop flavor.     After months of sparse emails, wild ideas and a couple of flights we were able to brew a beer with Stone Brewing's small batch manager Steve Gonzales in April of 2014. He and Beaux decided on a Saison style aged in both red and white wine barrels (both French and American oak) with sumo mandarins and acacia chips added in secondary. The result shows each brewer's affinity for complex, oaked beers utilizing specialty ingredients that stray from the beaten path. MADE ONLY ONCE AND RELEASED ON SEPTEMBER 15th, 2014

    This clean, unfiltered and easy to drink wit uses a Belgian Ardennes yeast strain to build a subtle fruity foundation on which to layer a blend of traditional and non-traditional wit beer ingredients. The hops and citrus peel play well with the spice character from various peppercorns and grains of paradise. This wit features a crisp mouth feel and lingering mellow flavors. The White Raven aims to bring in the spring, even if it is just in a glass.
