    2015 Corvus Frambicus American Raspberry Sour

    Here it is folks, our raspberry sour with all the soul we could squeeze into it. This pours bright and red with strong raspberry and mature soured notes on the nose. It drinks crisp and dry with a slight ‘raspberry hard candy’ note on the front. This soon gives way to a huge acid content which pushes the edge of comfort on the back of the palate. The finish is surprisingly clean and lingering. The base was brewed back in 2012 and soured using one of our two house sour strains, “Angelica”, which we grew up from wild bacteria and yeasts native to the Skagit valley. Copious amounts of local, seasonal and farm direct raspberries were harmed year after year in the making of this beer. CORBEAUX SERIES – TAPROOM ONLY

    This could be considered our first truly soured fruit beer. We added season peak Washington sourced cherries in two varietals, Chelans and Titans, to barrel aging scotch ale. The cherries were intentionally field direct and added not only fermentables, cherry tannin and color to the beer but also provided the necessary micro-flora to sour the beer. We then blended various barrels to yield a balanced, quaffable, complex and fruity Black Raven first. Rare bird, appears infrequently.

Stately indeed, but at 9.5% ABV, perhaps it is just a vain attempt to encourage the trickster spirit to act respectably. Released annually in the winter.

    In the creator role, and in the Raven's role as the totem and ancestor, the Raven is often addressed as Grandfather Raven. With this stately sense of pomp and tradition we would be bringing you our Imperial Stout, Grandfather Raven. However, this is an older, grander bird that had spent over a year honing itself in a 20 year old bourbon barrel. Since then it has been maturing on stainless steel. This robust black ale is full with rich dark caramel, unsweetened chocolate, with hints of coffee all mellowed with smooth oak and top shelf bourbon notes. Stately indeed, but at 11.7% ABV, perhaps it is just a vain attempt to encourage the trickster spirit to act respectably. RARE BIRD!

    Gunpowder Plot Nitro Porter

    This annual release nitro porter celebrates the thwarting of an insidious plot attempted by Guy Fawkes & his band of anti-heroes on November 5th, 1605. Fawkes’ goal was to blow up the House of Lords with barrels of gunpowder. This year we plotted closely with Anchorhead Coffee Roasters, out of Duvall, to create a perfectly roasted coffee exclusively for this beer. We soaked a portion of those pristine beans in top shelf bourbon, and cellared the whole shebang on criminal amounts of cocoa nibs. In order to unify the flavors and give it that classic British feel we conditioned it on Nitrogen. This beer pairs well with Bangers, treacle toffee or burning your Guy Fawkes on a bon-fire. So quench the conspiracy, light your fires and remember the 5th of November.

    Kraven's Kirweisse

    The Kir is a French cocktail of black currant liquor topped with white wine. Kirweisse combines a Kir with the basic elements of the German Berliner weisse style: refreshing, wheat based, tart. This beer’s nose will bring heavy berry-currant aroma followed by a woody wine-like depth. Kirweisse is very dry; has good mouthfeel from the use of wheat; and should taste slightly sour, but will not make your cheeks squeeze the inside of your mouth. A combined age of over 2 years in white wine barrels, Lactobacillus added while in the barrels and black currants added part-way through ageing. The Berliner weisse is typically consumed with the addition of a fruit syrup to cut the sourness. This permutation of the style will not need one; the black currants and barrel smoothness will take care of that for you.

    La Mort Rouge is born from a marriage between La Petite Mort, our dark Belgian style strong ale, and red wine barrels from our friends at Efeste Winery in the Woodinville valley. In La Mort Rouge, we use multiple specialty malts to create a rich, complex beer and then balance that with red wine tannin from maturation in barrels.     This beer was born out of the joy of late night double batch brewing. The whirring of the pumps and the wails of David Byrne led us to this new IPA idea. Built on a simple malt base this IPA will let the hops talk straight to your head. The hope behind this beer was to make a low alcohol IPA that has the same hop aroma and flavor profile of a standard IPA & even some double IPAs out there. Take a sip, sit back and ask yourself, can I get used to this lifestyle? Well, with a bouquet of hop aroma blasting us in the face and fruit flavors of peach, nectarine, & grapefruit backed up with a clean/dry bitterness leaving us wanting more, we sure can.

    This Northern France inspired strong pale hybrid has gone through a six month secondary fermentation with the “wild” yeast strain brettanomyces lambicus, then dry hopped in order to meld bright fresh hop aroma and accent with aged wild yeast character. Pear and citrus hops play with tropical fruit, smooth earth, and light hay flavors from the wild yeast. Released annually.
